Pan Steak Recipe From A Chef

I emailed a friend of mine who is a chef and asked for an easy way to cook steak and here is his response....

"Well lets see... I am more of a fan of cooking steak indoors with a frying pan and then into the oven. start off with applewood bacon in the pan cook till chrispy, remove bacon, then with a sweet red wine deglaze with about 1/2 cup cook wine and bacon till gooey, when the pan is hot put in steaks, cook about 4 min on each side, place on cookie sheet and into a 400* oven about 5 to 8 min. "

I inquired about the red wine deglaze and he replied...

"sweet red wine deglaze, all the bits and peaces of the bacon stuck to the pan, the burnt brown looking stuff left when the bacon is cooked is the best scorce of flavor, to get it from the pan to the steak you need to deglaze the pan, red wime works great and the sweeter the wine the more flavor. To get it all yuo have to do is take a 1/2 cup of the wine and pour in the hot pan and wisk"

This turned out very good and was fairly simple and inexpensive to make!

Re: Pan Steak Recipe From A Chef (Brandy)

I am a fan of the grill, but am going to try this. What cut of steak did you do this with Brandy? Thinking a strip might be better than a big old t-bone or rib-eye.

I done a strip steak; I've also done a cheaper flat steak this way as well.
