    This rib recipe is from the old HK's restaurant at Lodge of Four Seasons at LOZ. For decades these were the best ribs on the lake. The restaurant stopped making them when they moved from their old location. The old restaurant was an upscale steak and rib place and had a fire pit inside that was about 15 ft. by 5 ft. with 3 or 4 chefs working around it. I got the recipe from the lodge's retired head chef.

    1) take off the tendon tissue from the back of the ribs.
    2) marinate the ribs overnite in orange juice.
    3) cook the ribs for 15 min. on low heat.
    4) marinate the ribs again for .5 hr. and cook for15 min. on low heat.
    5) put on your sauce of choice, wrap in foil and cook in the oven or on the grill on medium heat.
    6) about 15 min. if you are going to freeze and eat later. about 30 min. iif you want to eat now.

    I will make 4-5 slabs at a time. I will eat one and freeze the rest. A time consuming recipe so I do them in bulk. They are bone sucking tender. If you eat ribs at my house, you are a lucky guy.

    Watched a rib show on the food channel and there is a place in either St. Louis or KC that supplies a bunch of wood to different smoke houses and they decided to start making their own ribs. The guy said he leaves the silver skin on. It helps keep the moisture in. I was surprised. I love me some ribs. Yours sound pretty good.
