Neighbors had us over for dinner last night and served jalapeno poppers, first time I'd ever had them. Man, they were good, those thing could be addictive.

No PITA, so to speak, this morning.
The poppers were not hot at all, I'd have liked them a little spicier. Maybe I can get Cindy to leave some of the seeds in when she makes them.

It all depends on the the pepper and if the ribs were left in. Had some peppers that had very little heat and others that had some really good heat, its kinda hit or miss.

I love me some poppers, much prefer the cheddar ones, over cream cheese. It is hard to find good cheddar poppers near me.

The heat in them is based on the specific variety. They actually have jalapenos that have no heat. They are used for wuss nachos and for color in mild sauces. In the old days the heat was controlled by irrigation during growing. More water less heat-less water more heat.
All that aside the best poppers I have ever had were down in Mexico. Little outdoor bar with a fire pit. Cook took these huge jalapenos and gutted them and filled them with a shrimp and cheese and roasted them over a fire.

Heard the hot jalapeno peppers are the ones with pointy ends and mild are the blunt ends. It seems to work that way.
