I have a 135 Optimax on my 18.6 Bayliner Fish and Ski that decelerates back to idle when pulling skiers and wakeboarders at slow speeds such as 10 to 15 mph.
The hot engine alarm comes on and is displayed on the smart gauge.
The motor runs fine at higher speeds with no alarms.

You might want to post this in the Mercury forum. This one is for modified or high performance engines. Don Weed should be able to help you out with your question.
+1 on Don, but I am thinking that the motor needs to be lowered or trimmed differently wne pulling skiers as it seems it is probably losing water pressure, heating up and then sending the alarm.
Definatly have the water pump checked out
