    Smoke Turkey

    Did a test run today to find out how long it would take and taste. Cut a 14 lbs Turkey in half and put it on the smoker at 300 to start and finished it at 275. Took three hours and tasted great. Ready for the big day.

    Looks great.


    If you only cut the backbone from your bird you can lay it open the same way but when it's complete you can "fold" it back to it's normal position for presentation if you wanted.

    Yes, I was going to just cut the backbone out, Spatchcock, but it looked like a lot to tray, so I cut it in half.

    Much eaiser to handle.

    The dark meat tasted like ham.

    Looking forward to smoking another one this week.
