George, one of the easiest I have is to take a bag of pre-chopped cabbage, add carrot slivers, and then add enough Western Salad Dressing to cover... We had a chicken place at home when I was a kid that did this, and this tangy coleslaw was very good. It's easy and a great break from traditional slaw.
Like any slaw, it will need a bit of time to flavor through, so an hour or 2 in the fridge is recommended, and overnight is best.
My wife makes slaw from a recipe off of Rachael Ray. Very easy to make. I can't remember exact measurements but this is pretty close.
1 bag of shredded cole slaw mix
1 cup of dill pickle juice
1/4 cup of honey
Mix all together and salt and pepper to taste. She makes it a couple of hours before supper and lets it sit in the fridge to mix together. It is very good even for a couple of days after. Might want to check on exact measurements but that will get you close.

1/2 medium head cabbage, shredded
5 green onions, chopped
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.In a medium bowl, whisk together the oil, vinegar, sugar, ramen noodle spice mix, salt and pepper to create a dressing.
3.Place sesame seeds and almonds in a single layer on a medium baking sheet. Bake in the preheated oven 10 minutes, or until lightly brown.
4.In a large salad bowl, combine the cabbage, green onions and crushed ramen noodles. Pour dressing over the cabbage, and toss to coat evenly. Top with toasted sesame seeds and almonds.
Great recipes!
Just make sure you don't add a lot of mayo because it will get soupy, and fresh cracked pepper helps out too.
