Depends how good your eyesight is. Not joking. Many use this criteria. Also depends if you have Active Target.

Depends on what size the two screens are.
I ordered a boat and thought I would see if i could upgrade to the Elite 9 fs. I may just get them for console and bow if not too late.
I had Elite 9s on the my last boat. At the console it was fine because it was right in front of me while driving, no problem. The 9" was a tad small for a bow display though (I'm 6'2" and was using a 12" mount off the deck).
My current boat has 12" units at the bow and console and I'm much happier.
Larger unit on the bow because it is the farthest from the ol' eyes and the one I use the most.
Helm unit is pretty much in my face so the bigger screen is at the bow.
