We need a little more info, like gear ratio, water pressure, jackplate height. I'm thinking you're probably gonna need to raise your motor. As far as the holeshot being bad, I would pull one plug completely out, then another until it jumps outta the hole.

You should be runnin in the low to mid 80's, and should be turning alot more RPMs than you are with that 27.
