    Jerky Recipes

    Hey everyone, seeing how it's about that time of year, how about posting your favorite jerky recipes, and see how they stack up against different parts of the country...

    Here's mine-
    (everything is touch and go based on how much meat, etc.)

    1/2 cup +/- Teriyaki Sauce Soy Sauce
    " " Soy Sauce
    couple dashes Liquid Smoke
    couple dashes white vinegar
    2-3 tbsp Honey
    garlic powder
    onion powder
    mesquite seasoning
    Tony Chachere's Original Creole Seasoning
    cayenne pepper to taste
    black pepper

    mix everything but pepper and marinate overnight at least 8-10 hrs and put on trays and pepper to taste.

    i use the kikoman teryaki that is really thick and come in the glass bottle mixed with some orange juice, i marinate the meat overnight and then put on the racks and sprinkle with seasoned pepper. the acid in the orange juice helps break down the meat and keeps it tender while adding a nice citrus flavor with the teryaki. i also use the spicy miso one from kikoman sometimes...they are both delicious.

    How long do you cook it and at what temp? Oven? Smoker?

    I put mine in a dehydrator at about 135 deg. time depends on how much I'm making and how thickly I've sliced it.

    I use ground meat and cut it about 1/4" thick.......and put it on the dehydrator for about 8-9 hours.........perfect every time.
