Personally, I like the taste of salmon so much I hate to cover it up. I will coat the fillets or steaks with a good extra virgin olive oil, fresh cracked pepper and sea salt, and broil until done. I like to take a good salsa and drizzle some on the fish just prior to serving. If you like garlic, add some to the fish along with the salt and pepper and leave the salsa out. You can do this on your grill too, if you like, just oil the grill rack well so it doesn't stick.
will olive oil rubbed on the rack keep it from sticking?
It will, but I generally use vegetable oil on my grill/broiler racks. Cheaper and zero flavor.
