    Simple Salsa...(good too)

    This is really easy and it tastes great.

    1 large can diced tomatoes
    1 can Rotel tomatoes
    1 large white onion
    3 jalapino peppers (add more or less to taste)
    1 clove garlic (minced)
    1 tablespoon cilantro (add more or less to taste)
    Salt and pepper to taste

    Finely chop the white onion (food processor works great) and place in a medium size bowl. Drain the tomatoes and the Rotel tomatoes and add to onion.

    Heat a small frying pan with a small amount of olive oil and roast the garlic. Remove the seeds from the jalapinos and finely chop. Add to the garlic in the pan and sear until the skin starts to blister.

    Add this to the tomatoes and onion. Salt and pepper mixture and add the cilantro. Refrigerate overnight and chow down with some good tortilla chips.

    This salsa is also good to cook with. It takes about 15 minutes to prepare start to finish.

    I LOVE Salsa and HATE store bought crap and have made my own for the last few years now.

    one thing I have learned with experimenting is that Vinegar seems to help it a little........I use Red Wine Vinegar but not much......this helps it lock in some good flavor......you can also use Franks Hot Sauce too....it has some Vinegar in it but can ruin the taste if too much is added........Cider vinegar can be used but I have not liked the flavor of it with tomatoes.

    The roasting of the Vegies is great......I have done a version where I had Roasted Garlic, Onion, Green/red/yellow Pepper, Sun Dried tomatoes and Jalapenos roasted on the Olive oil.

    The Cilanto is a MUST.......I love that herb with Salsa
