I think you are over-thinking this. You need to get more information and data for the specialists to help you out. Everything you get will be a compromise.

Do not worry about the rooster tail. A high tale means over trim and speed loss.
you need to watch what happens to speed as you trim out. Trim to max RPM and note the speed. Then bump the trim down ( just a touch on the switch) and watch the speed. Do this again. watch the speed. Speed usually increases a little each time. If speed drops then you know you were in the right trim range - for that speed, for that weight condition, for that water condition.

The WOT spec for your engine is 5500 rpm. Best speed and hp will be seen if the engine maxes out between 5100 to 5400.
The 26 Raker cannot be reworked down in pitch.
The 4 blade Renegade will deliver really good top speed with less feedback torque on the steering wheel. Hole shot will be strong
The Raker will allow a little higher motor height to reduce drag and increase to speed. Hole shot will be a little slower. Only in really light weight conditions will that engine turn a 26 Raker. Acceleration will be slower.
