Advice on set-up?

[HYBRID ANGLER]

I have a 2001 21'xdc Bullet with a 2000, 225 Evinrude Ficht, and lighting gear case, what height should the motor be? What size jack plate? And which prop should I run, for the best performance? This boat will be for bass tournaments, Thanks
