    Briskit

    Cooked a brisket all night for my grandson, Ryan Taylor Barnett's birthday party today. It came out great!



    Crappie fish fry. It don't taste any better.

    Good job, how long did you cook it and at what temperature? I have been thinking about trying to cook one of those on my Pit Boss 820. Thank you.

    I put it on my Victory Pellet smoker at 5pm Friday on 200 degrees. Wrapped it at 5:30 am Saturday. Cranked it up to 300 degrees to finish once wrapped. Took it off at 8:30 am Saturday and sliced it at 11am. I would have liked to to let it rest a little longer. I used olive oil as a binder and pit barrel beef and game rub. Love that stuff.

    Looks great! Been a while since I've done one. I've got two in the freezer and need to pull one out and get to smoking.
