on twin engine boat, one engine down, how hard to push remaining engine?

Have twin Merc 300 V8's. With one engine down, how hard can I push the remaining engine without hurting anything? A "limp home" speed is 2000 rpm, where it wants to start planing, which keeps the water temp @ 138. Oil temp @ 170. Boat will plane @ 3200 rpm, water temp doesn't change, but oil temp climbs and can reach 180-190. That's when I back down. And that's my concern, what is OK?

You're still fine there. Engine calibration has specific thresholds and will advise if oil temp is too high (would also enact engine guardian).
