An additional bonus next to the obvious reasons mentioned in previous posts for having 2 (or more) units is fault tolerance. If one unit went down, you're not dead in the water at the bow.
I went from 2 to 1 and have no regrets. I have mapping on button 1 and scope on 2. I go back and forth with ease and do not need a map up all the time.

Had 1 HDS 9 up front running AT, mapping and 2D sonar. It was too much so I added a second 9 live just for active target. Works great, the 9's are out of the way and now I don't touch my graphs. 1 9" dedicated to AT the other spit on mapping and 2... works great.
I would run 3 if I had the room and extra funds. Map, 360 and Live.
I run 2 stacked-12" lives on the bow. Top dedicated Live Target. Bottom map and 2-D spit. Sometimes I spit the bottom 3 ways with map/2-D/DI. I love this setup for off shore fishing!
