    Jerky Recipe

    Anyone care to share a good marinade you like. I like mine, but I just wanna try something a little different. Maybe something not quite so heavy on the soy sauce, which mine is. Please share if you would. Thank you.

    I haven't made this in a few years now, but it's pretty good. People don't even realize it's made from burger.

    3 lbs venison burger
    1-1/2 tsp onion powder
    1-1/2 garlic powder
    3 tsp sea salt
    3/4 tsp Cajun seasoning
    3/4 tsp Cure

    Mix with 3/4C ice water, 1/4C whiskey

    Make that into a 1/4" thick square or rectangle.
    Place on wax paper and refridgerate overnight.
    Put meat and wax paper out on a cutting board and cut your pieces with a pizza cutter.
    Peel them and place on smoker racks.

    Smoke @ 135F for 1.3 hrs
    @ 160F for 1.2 hrs
    Dehydrate @ 160F for about 5 hrs, or until desired dryness is achieved.

    My favorite is from "Hey Grill Hey"
    I use a smoker at 170F
    Dr. Pepper Jalapeno Marinade
    2 cups Dr. Pepper
    2 jalapenos sliced
    2 Tablespoons kosher salt
    1 Tablespoon Worcestershire sauce
    2 teaspoons black pepper
    1 teaspoon garlic powder
    1 teaspoon onion powder

    Use 2-3 pounds beef rye of round.
    I substitute Peruvian Aji Lemon peppers, red(frozen section of Compare Foods in my area) instead of the jalapeño.

    Thanks for the tip, I have 3.5 lbs of eye of round marinating right now!

    Well I finished it up and followed directions exactly. I’m a little bit surprised, there’s really no heat at all. If I make it again, I will definitely add some cayenne pepper….it’s good but not enough heat. Not sure what I might have done wrong, I followed her instructions exactly. Good experience.

    I used another one of hers that came out very tasty....added crushed red pepper flakes as suggested as an add on and the heat slips up on you after the third bite.

    This sounds very good. Different than the usual soy/teriyaki stuff. Thank you for posting. Exactly what I was looking for. Can’t wait to try it!
