    Had a great day

    Gizzards dusted in jalapeno salt for Breakfast. Smoked Chicken for lunch and Pork Butt for supper.







    Crappie fish fry. It don't taste any better.

    I don't like gizzards or liver of any kind,but the chicken and pork look amazing

    I see you have the chicken in with the pork butt at the same time.
    I'm presuming you smoked it at a low temp (225-240).
    Did the skin on the chicken turn out rubbery?
    When I do a chicken in the smoker below 300 the skin is rubbery.
    I've heard of guys smoking chickens at low temps and the skin comes out soft. How does one do that?

    There’s a bbq buffet close by that has fried livers and gizzards on Thursdays. I know they’re not the best health wise, but I limit myself to hitting it once every 3-4 months.

    About 155 degrees on Thigh temp, I pan it, Spray the skin with Parkay ans cover with foil until the temp is 170. Turns out tender everytime.
