    Japanese knifes

    Looking to purchase a few. Maybe a small set. Looking for some of the best name brand. Looking for QUALITY! Maybe willing to purchase just one to try. I am looking for something to hold a edge.

    If you are looking for edge holding ability the Japanese knives are usually a finer edge and require a touch up much more often than the European pattern knives.

    We have 3-4 Wusthof Asian style knives. They have an 10 degree edge (14 degree on American styles). Razor sharp, and they hold an edge.
    The Classic is an excellent value. The Ikon is pricey, but just an all around exceptional knife. Very comfortable handle.
    Have a couple of Zwilling Professional S Asian style knives that sharpen at a 10 degree angle (American styles at 15 degree angle).
    Either brand is excellent quality. Buy their hand held sharpener. Just a quick wipe after ever few uses and it’ll stay razor sharp.
