Lot's of recipes out there for using the lean cuts but I cannot say I have ever seen one for making jerky from ground meat.
I use the Hi Mountain seasoning for all my ground meat venison jerky.

I really like the High Mountain Pepper Blend for doing jerky with some smoke. I have done sliced venison and people thought it was beef. I like to cure mine for 48 hours before I smoke. I don't think I would do that with the ground venison but the sliced seem to take on much more flavor.
