Dinner was excellent tonight. Worked at it for 11.5 hours yesterday.
One meal gone, one in the chiller, four vacuum packed and frozen.
Rubbed until the massage therapist was whipped. Chilled overnight.
Apple and Honey rub, touch of chili pepper and paprika to kick it.
Tossed into the smoker @ 225F, bare naked. Pulled at 170F inside.
Pan & tent with apple juice, bourbon & rub. Cooked until it hit 203F.
11.5 hours in the smoker, 45 minutes cooling, hand shred to finish.
Wood used ... apple and pecan, perfect flavor. Wife was thrilled.
