    All Day Smoke ...

    Dinner was excellent tonight. Worked at it for 11.5 hours yesterday.
    One meal gone, one in the chiller, four vacuum packed and frozen.

    Rubbed until the massage therapist was whipped. Chilled overnight.
    Apple and Honey rub, touch of chili pepper and paprika to kick it.
    Tossed into the smoker @ 225F, bare naked. Pulled at 170F inside.
    Pan & tent with apple juice, bourbon & rub. Cooked until it hit 203F.

    11.5 hours in the smoker, 45 minutes cooling, hand shred to finish.
    Wood used ... apple and pecan, perfect flavor. Wife was thrilled.

    Good lookin pig butt Tampa Jim! Its all worth it when it comes out great. Not sure what your sauce preference is but a good NC vinegar sauce brings out the flavors without covering up all the goodness

    Thanks. We jump around on sauces. Alabama White, South Carolina mustard based & Memphis tomato based.
    We tend to eat more poultry than anything else, but we do mix it up, thus the various sauces. Rubs are the key.
    Often we don't use sauces, instead a dry rub and spritzing during the cooking. Or tenting half thru the cooking.

    And, yes, we're BBQ fans. From brisket in Bastrop, TX to pulled pork in Lexington and the rib capitol, Memphis.
