Start with the basics, visual inspection of the boat and motor, water pump factory kit, thermostats, water inlet screens, temp switches, wiring, etc.

checked stats opening at 185 ,plugs good . so i back flushed her checked a few things and went to the lake
and she ran fine had up to 50 here and there.....seemed to work.
Stats should be opening ~ 145* not 185*.
Another thing to look into is fuel restriction. My 1995 175 Faststrike has a solid alarm when the gas is restricted. A few times I turned the gas off instead of switching to the other tank and it ram just like how you described. Wouldn’t get above 2-3k Rpm’s, bogs down, constant alarm, temp gauge was fine, then I checked the primmer bulb and it was sucked dry.
