1997 Champion 191DCX Setup help !

Hello all,
I am back in the Champion family again, thank goodness! but need a little help. I have searched the forum but cannot find specifics to my questions.
I really appreciate any help
I have owned a 204 and a 196 in the past, you guys helped me get them both setup where they ran great !
This boat is a 1997 191DCX with a 200HP Mercury EFI It has a 3 blade 25P prop on the boat and to be honest
its slow coming out of whole and a bit more squirrely than any champ I am used to, also it feels like the front end sits a bit high versus what I am used to with my other champions.
I assume I need to start with the right prop and prop to pad measurements? and or any other recommendations you guys might have.

I have a 200efi with a 25p trophy, and a 24p tempest as a spare. The trophy gets me on plane easily

All the 191s I’ve seen sit nose high
