Piss on the cooking oil. Spray a can of WD-40 in the pot when they are boiling, then they will peel good.

Yeah...I've seen people use the oil, and a stick of butter, etc....then I watch as they bring the water to a boil and boil them for 10 minutes before soaking... Imma tell you...I have boiled from usually around mid November till August every year at least twice a week (I know not near as much as some of you seafood market workers.... ), and I've run across some pretty hard crawfish...unfortunately, I had to keep buying them even when they got so hard you got a free hammer with every sack....and I ain't never seen no oil work to get them to peel easier...

Thas because oil it dont work. When the craw dads get hard late in the season, i usually let them boil another minute and soak a little bit longer.

Sushi, back in the eighty's i used to work for a catering co. Me and another guy would drive a truck and trailer with a big azz pot and boil on sight. Whats got laughing tonight is how everyone got this secret way to boil bugs, when the truth is no much has changed in the way its been done for years and years. It is almost impossible to screw up bugs as long as you dont over cook them. These days the instructions on the box are just fine and will come out good most every time..

Have to agree. I went to the in laws family this weekend and they are from north miss. They boiled two sacks of bugs and I just knew they were wasting money. They followed the zatarans box to the t and they were actually very good

Absolutely not...I just got out of the crawfish business this year, and I in no way, shape, or form want to do it again...I actually enjoy seeing my family from the months of january through August....I only thought they grew for 4 months out of the year for a while there...

I like Chackbay but it gives me the runs!

I've converted over to Zatarains. I use full jar of powder plus a medium bottle of liquid crab boil, salt, hot sauce, along with onions, garlic, potatoes, corn, sausage, carrots (hot!), lemons, mushrooms.

    Re: Crawfish (Chad)

I just use zatarains...every once in a while I get the extra spicy zatarains...big bottle of lemon juice...fire is on until they float...sometimes thay means they come to a boil...sometimes not...and soak them till they sink...just like frying fish...when they float, they are cooked...when they sink, they sink cause they have soaked up the seasoning..

I've gotten real crazy lately though and sometimes I use Louisiana...

One thing you can count on though....they say that politics and religion in the lounge causes alot of arguments and hurts feelings...I would be willing to be that criticizing the way someone from LA boils their crawfish is just as insulting to us...

Kinda like telling a Texan his barbecue is not right Friend of mine in the seafood business told me by the end of the month there will be so many crawfish they won't be able to give them all away. Look for a serious price drop.
