Seahorse and you guru's, NEED Help/Water pressure crazy

My old water pressure gauge was reading no pressure at idle so I bought me a sender unit from OMC that reads thru my NEMA 2000 on my I command. I also installed a new water pump for the first time by myself. I was getting a delay in pressure building up when first started. It took 1 min +/-for pressure guage to read 1.87 to 2.5 at 500 RPM(idle) and 1000 was about 8. 3500 and above was 10 to 20. bounces around. I was told it was too low so I wnet back into my lower unit to replace the 3 rubber gaskets. The small rubber gasket had fallen out of its grove and was pinched on the SS impellar housing. I put the three new gaskets. I had a terrible time with the largest one keeping it in place while putting the lower unit back in place. It is part grove fit and the rest fits around the SS impellar housing. Ran the boat first time today. The low rpms are still the same. The unit bounces form 8 to 14 around the mid range rpms. This guage will never stay stable. It always bounces. I ran the boat at 5500 rpms today and trimmed out 1/2 way(Idid lower my jack plate1/4 " lower than the motor was before. )./ The guage went crazy jumping from 5 to 22. The heat on the motor today got at its highest when at 5500. 166.5 deg. Idleing around alot and running 3500 to 4000 it stayed 156 to 160. The pee hole on the motor has a very strong stream at all rpms. It is very strong at high rpms. The dealer that i trust is 100 miles away. Do I need to go and let him install me another water pump kit. Motor has 120 hours.
I installed this new water pressure sender by cutting the original rubber hose coming from the head going to my old mechanical pressure gauge off by about two" anm\d then connected.

Seahorse on the miss that i had where you told me to clean the exhaust sensor fitting. I did and about 90% of the miss went away . Still a small miss but only around 1200 to 1500 rpm.

If the readings aren't steady, the the incoming water is aerated or has exhaust gases leaking in, or the sender is flaky. Install a regular dial type pressure gauge to see if it reads steady or erratic.
