I'm planning on putting a 8' power pole pro on my ZX225. How much taller is it then the motor. Need to make sure it will fit going under the carport.

No worries. Just lower it before you back in.
Same height as the motor when the motor is tilted up on the trailer. Enjoy, I love my power pole.

How are they getting mounted to the back with the sponsons? Can someone post a picture?

On my 2003 sx200, I got the adapter which pushes it out to the side and away from the boat. We had to loosen the motor to place the adapter under it. No jackplate on my Skeeter.
On your ZX225 I'm guessing you have a Slidemaster manual jack plate? If so you will need the PK-S-7-3 in either port or starboard version. this bracket bolts directly to the side of your jack plate using the existing bolts. Please let me know if you have any further questions.
I have an 8' on my '08 ZX225 and it's about even with the engine.
