I stepped up from a 190 to a 225 and YES there's a world of difference in the ride. As far as which one is the best for fishing Fork I cant tell you, but I do know you wont be disappointed in the ZX225.
Spped is not a consideration at Fork. Besides the boat lanes not many places to run wide open. I have fished Fork just fine in an 18' boat as well as a 22' boat. For ultimate fishability go at least a 20' platform. Personally i think the Zx225 is one of the best boats of ALL TIME not just Skeeters included.

I have a 20i. The three ZX225's I had were probably 68-70ish on a good day loaded.

Love it. I am a big guy and I think the 20i has more room and has a better rough water ride. I am knocking on 74-75mph on a good day.
I'm with Mark. I've run my 225 on small lakes to monsters like Amistad on windy days. The ZX225 is perfect for Texas, one of the best built boats. If you fish more big lakes than smaller ones go with the ZX250. If speed isn't a factor and you fish mainly smaller lakes than Fork save the $$$ and get a ZX225.

Like Mark said, mine runs in the 69-71MPH range with a load and partner, pretty much will always run at least 70. By myself I see anywhere between 73-75 depending on the conditions. I run the stock 25 T-1 on mine.
BTW, I honestly think my 225 is more nimble than my 190 was, at once I learned how to drive it. Took me a little bit to adjust to the speed of the hydraulic steering vs. dual cable. My home town lake is only about 670 acres and hard to manuever on but this 225 does great. To run this lake its almost like doing a slalom course in places and this boat does it every bit as good or better than my smaller ones have.
