Cut the red from the filet....i like them best on the grill. Butter...lemon pepper....worchester sauce....lemon juice........wrapped in foil.....GREAT!!

Yes, cut the red out like a redfish. Course meat but actually pretty tasty. We usually use it in courtbullion.
