    Frying fish & Extras

    Okay let us hear all the different or better ways to fry fish and what extras yall have with fried fish? Secret recipes are welcome

    Instead of fish fry, coat fish with Wheat Germ, taste great and sweeter.

    I told my brother the other day that I wish I knew what Sushii puts his fish in before he fries it bc that chit looks tastey!

    I like white beans on the side. Or some jalipenos hushpuppies and sweet potatoe fries in the oven. Louisiana southern crispy seasoned fish fry is hard to beat. The blue box.

    I soak them in milk, louisiana hot sauce and mustard the night before

    Chef KD seasoning is some good stuff. Just follow the package with the cold water and it comes out crispy. Also if you like, add a cap full of liquid crab boil. Gives the fish a good taste.

    Louisiana Hot sauce, a little mustard, and egg wash then batter with 1/2 yellow corn flower and 1/2 corn meal seasoned to taste. I don't buy fish fry any more. I buy bulk 20 lb bags of yellow corn flower and mix my own.

    I like to make a little potato stew to go on the side. For some reason it just goes perfect even though it doesn't sound like it would. Sometimes I'll make a potato salad and a crawfish etouffe to go over the fried fish.

    Not the best but it's what I like to do.

    I use the method and batter I found in a book written by Frank Davis. Two cups corn meal, two cups corn flour and one cup corn starch. Season to taste. The book says to shake the fish in the flour mixture to dry it, dip it in an egg wash, back in the flour and fry. The first dredge dries the fish and batter sticks better to dry fish. Wait a few minutes to drop the fish in the grease, the batter needs time to "set up" on the fish. He explains it in his book, but I don't remember what he says about it.
