BUT, if you are talking about Amberjack....I would marinate it in italian dressing for 4 hrs and grill or bake it. You can also fry it.
Being up north i would think our own "pike". The best recipe would be a bat upside the head then tossed on the banks with some fresh greens.![]()
There are some guys that bro-in-law works with, they carry a wooden bat in the boat and when they hook into a sho-pick (I know not right spelling) they beat it then toss it to the banks.

I gotta tell yal this bringin up shankin fish and beatin jack fish over the head, I still have the scars( not really) but any way.
Okay well my dad and I decided to go fishing one day( which is always a disaster) so we get the 12"( yea 12 inches thats what it felt like really 12 foot) flat bottom aluminum sardine can boat launched and we get out and we are fiashing catching bream and perch and small Largemouth and all of a sudden there is a big hit and boy he got excited, so he was settin the hook and cussin and pissin and saying how he has a good en' well about that time it tires it out and reels it up and its a gar fish, so he goes to makin up words Ive never heard of![]()

so then he says gimme that &$##$%^%^$$#$^%^&^ boat paddle, " okay daddie" WHOMP!!!!!!!! breaks its beak and hurls this thing across the oxbow and it hts the bank like a sack of poo. Ansd he goes thats how you take care of a ^%%#$#$#$%^(&*&*%%$# gar fish. well just had to share that one.
Those gar and sho-pick can tear up a dam bait quick. I hate them.

For some reason when I release a jack they always somehow break their lower jaw. But my Dad is wanting me to bring some in so he can experiment. I know if he fixes some, I will have to eat it so I though I better check for a good recipe. I have already told him that I'm not keeping any if someones looking.![]()

I eat choupique/grindle/bowfin or whatever you call it. Now for the disclaimer*** It must be fresh and it must be cook on a Bar-B-Que on the half shell (like a red fish). I was not easy to make me beleive it, but they are very good. I will only keep one if I know that I will get a chance to clean it and cook it that day. We catch them on yo yo camping trips every winter. We will cook it scales down until the edges are pertty much burnt and the white meat starts to pull/curl away from the skin. We do not cut it up or try to put the skin/scales on our plate. We use a fork and pick the meat usally as an appitizer as the steaks are cooking. A little Bar-B-Que sause never hurt either, try to find Jack Miller's. It is very different from a "kraft/k.c.masterpiece" type sause.
Now as for Jack Cravalle, they are fun and I mean VERY fun to catch but I will never eat one. I know of an older man in DuLac who eats them but he is the only human that I know will do such a thing.
