    Best way to cook your steak!!!!

    I like my steaks and cook a pretty darn good one on the weber. I was looking for a better way so I googled it. What I found seems to work really well. Try this if you like a great steak.

    Preheat a cast iron skillet and an oven to 500. Rub alittle olive oil on both sides of your steak and apply your favorite seasoning. I like McCormicks or just coarse salt and pepper. Cook in the skillet for 2 minutes each side once the skillet is hot. Remove and place a pat of butter on the steak. Put in the oven and cook to desired doness, rare, medium, etc. a good thermometer works well here. Once within 5 degrees of your doneness, remove to plate and cover with foil for 5 minutes. Eat!!!!!!

    This is the way lots of the quality steak houses cook a steak.

    Try it! If you want a demo, you buy the steak and I will show you. I like filet and I live in south austin. HA HA HA

    The wife did a couple like this when a downpour took the grill out of play one night. Not sure of the temps, but same technique. Seared in a pan and finished in the oven and they were damn good. Worth trying even if it isn't raining.

    Buy a TEC infer-red grill . The newer TEC grills have the ability to get very high heat for a great sear and the ability to cook lower to finish it off. The newer grills also have no flare up. Many very good resturaunts use their commercial grill

    My wife's brother in law works for the Sheraton hotel in Philadelphia, that's how they do it.

    One of the most important things you can have in the kitchen is a properly cared for cast iron skillet.

    Bake. I use a meat thermometer but you can tell jutsw by pressing on it if you cook very ofte. Try it. Let us know what you think.

    When I was 15 I worked for a large steak house. In the kitchen there were two extremely large gas stoves, each one was very long, each had 10-12 large burners.They looked identical except one of them had a slotted grill on top (like your charcoal grill). One was for stock pots,pans, ect. The one they grilled steaks on they turned all the burners on--high on one side to sear, then slid them over as more orders came in.
    They were known for steaks---avg. W/E night they would grill 400-600 each night.

    That is what I am talkin about. Never really knew this little secret. It works very well. the butter at the end in the oven makes it all good.

    Smoke them on the smoker (180 degrees) for 1/2 hour. The transfer them to the weber kettle (500+ degrees) to finish them off. I dry age all my steaks at least 30 days also. I don't go out to eat steak cause it will be inferior to my product! It's the whole process, drink some beers, start up the charcoal, smoke the steak all without the ball and chain hanging around disturbing my piece and quiet.

    so after the oven do you cover with foil while still in the skillet or do you actually plate it then put the foild and let it stand for 5 minutes?

    On the original post it says to cook the steak for 2 minutes on each side then remove and add some butter then return to oven. Where it says remove, do you put the steak in a different pan or put it back in the cast iron pan at 500 degress?

    I remove the steak from the iron skillet and place it on a seperate pan. Im usually doing 3 or so of these at a time so its just easier that way.
