    Duck Breast

    What's a good, easy way to cook a duck breast?
    Just got back from a hunting trip and don't want to screw them up; i've never cooked duck before now......

    Many people do not like the tast, but I have made them into strips and medium fry, then eat with rice.

    I have baked then place over rice with gravy. Needless to say I like rice with my duck.

    You should do a search fro recipes on Foodnetwork.com and internet to see what you might like. It may take a few times to find a way you really like.

    Here is the way we do it, and my opinion the only way!!! We kill puddle ducks mostly
    Depending on the type of duck on the size of breast.
    1.*With teal and woodduck I butterfly each breast stuff zesty banana peppers. Wrap with bacon and stick a tooth pick to hold bacon. each duck makes 2 pieces
    *with larger ducks mallards, blacks, gadwall, etc I take 1 breast cut it in half then butterfly it, stuff it with banana peppers and wrap it with bacon. each duck makes 4 pieces.

    2.Cook over hot coals. You want to cook it hot and fast. crisp the bacon but you want your duck to be cooked medium rare (if you cook it too done it will have liver taste).

    3.Season with your favorite seasoning add BBq sauce. ( i use my home made vinegar sauce) goes well with it.

    4. ALways remind people when they are eating, there is a tooth pick in each piece, and could have steel shot in it.

    Another way that is good is to cut into smaller pieces, wrap in bacon with cream cheese & jalapeno peppers, & grill it until the bacon is done. I do this with deer also.
