    Chicken roll ups

    Bonleless skinless chicken breast
    1/2 cup brown sugar
    1/4 cup chili powder
    cream cheese
    bacon
    jalapeno

Slice chicken breast about a quarter to half inch thick.
Mix brown sugar and chili powder.
    Sprinkle mixture on chicken.
Spread cream cheese on top of chicken.
Put a sliver of jalapeno on top.
Roll from one end and wrap with bacon.
Put more brown sugar/chili powder mix on top.
Spray broiler pan with non-stick spray.
    Put on broiler pan.
Put in 350 degree oven for 20-30 minutes, or until bacon is crisp.

I made these up the other day and they are DELICIOUS!! I can't wait to try them in my smoker. Hope you enjoy.

    Sounds very interesting....

So you roll the whole breast up and wrap it up with bacon?

    Re: (pickupman66)

I took my fillet knife and sliced them fairly thin. This made the whole rolling up process ALOT easier. I would say they were 1/4 inch thick. I just used 1 or 2 strips of bacon. Some were small enough it didn't even take a whole strip. I used the boneless/skinless chicken breasts you buy in a bag. It was a little time consuming, but very well worth it. When I do it again I will try to get pics. (they don't last long once they come oput of the oven!!)

I am trying to picture how you cut up the breast. I really cannot tell by the picture. They look great but please explain to this old man how to cut up the chicken breast.

    Re: (GRANDPAOF7)

I just put them on a cutting board, take my filet knife and slice them about 1/4 inch thick. I can get two or three from each breast, depending on how thick the breast is and how thin I cut them. Hope this helps.

    Re: Chicken roll ups (overspray)

If you don't want the jalapenos hot, freeze them. It takes the heat out and leaves the flavor in.

You can also do this with deer meat, we have them at our deer camp all the time. Very good.

    Re: (Brandy)

Made these on the grill finally. I found it was easier to put foil over half of the grates and put the rool ups on the foil. This helped control flair ups and they set there and cook in what looks like caramel!!! Hot grill(350) for about 20-25 minutes. They were delicious!!
