    with or without vegetables, etc.

trying to eat healthier this year by not frying EVERYTHING.

In a baking dish "large enough for the fish" put just enough olive oil to lightly cover the bottom, roll the fish in the oil, put fish in seperate dish and season to taste. "I use season salt and blackening powder, but whatever you like will work" Cut an onion into fine pieces, enough to cover the bottom of the dish with the olive oil in it. Place seasoned fish on top of cut up onions. I like to add pemintos on top of the fish to kick it up a little or you could use rotel tomatoes if you like it hotter. Mist the top of the fish with garlic or black pepper. pre hear oven to 350 bake for 30~45 minutes. Serve with french cut string beans or whole cornel corn and enjoy

Here's a few ideas for baked/boiled fish and seafood, which are healthy choices... You can also broil and grill fish fillets, which would be just as healthy for you... Firmer fish like Orange Roughy, Mahi-mahi (dolphin fish, not Flipper), Tuna, and just about any other salt water fish will grill/broil nicely... Tilapia is also a good choice for broiling... I use lemon, Tony's, garlic and a little butter as a baste, and it's really good!!
