This is an excellent reciepe that our family, especially our kids, go crazy for. It was posted in our church cook book a few years ago and if you like beef stew, you'll love this one... I have to say, I was skeptical at first when my wife told me about it, but we have it all the time.
Ingredients are:
2 lbs Beef Stew meat
3 or 4 large potatoes (cut into bite size pieces)
1 bag of small carrots
1 tbs sugar
2 tsp salt
1/2 cup tomato juice
3 tbs Tapioca
Cut the beef into cubes and place in the bottom of 8"x 11" casserole dish for baking. Chop onion and sprinkle over beef. Cut potatoes and carrots into bite size pieces and layer over the beef. Blend together (in seperate container) salt, sugar and tapioca and sprinkle over entire contents in dish. Pour tomato juice over all and cover pan with foil...seal the edges. Bake at 250 degrees for 5 hours and serve.
