buy a newer boat, they have dual pin holes for seat position. Thought about the offset seat posts but I have never seen a taller one. Taller they are the more pressure u'd be putting on the bottom plate.
Moving a seat pedestal usually means cutting the carpet, And im not sure if they re enforced the area , so possible 6 inches back may get you out of the re enforced area and won't hold. Anyways just my thoughts.

They make an offset seat post for this problem. Check out bass Pro Shops. I think they have them.
I have one its to short and is very unstable(spins around)
Can the screens be reconfigured to give you more room? The telescoping pole might be an option,
