    Summer Sausage

    20 pounds of Venison Summer Sausage, started at 7an, finally finished At 10pm. Long slow smoke!

    Any recipes, tips or information on how to make it? I am going to try to make some this year with my deer meat.

    To start doing it, I would suggest getting a spice mix from Waltons Meat, one if the better suppliers. H Summer Unit is very good. If you want I make your own from spices, one of the books by Marianski.

    I use L.E.M. seasoning, And follow their directions. Good stuff. Just use 30percent pork trimmings.
