IMO, the MG Tour and Tour Pro have the best lift assist system hands down. The motor isn’t light, but the effort to deploy/stow is minimal.

Ultrex is in the 80 pound range.

Get a 12V motorguide bow mount motor. They are the lightest.
A pivot style trolling motor like a minn kota terrova or a motorguide xi3/xi5 would be pretty light. I have seen some Allison XB2003s for sale with that style of trolling motor, I would assume to get better speeds.
The power pole move pv style would likely be pretty light too I would imagine.
I've been blessed and cursed before because I have a tendency to communicate the first thing that comes to mind.
I have a background in (auto) racing. There's a bunch of wind drag/resistance at 80 mph. Perhaps some kind of spoiler/airfoil on the back of the boat would help. I also considered mentioning something on the front of the boat to create aerodynamic lift, but that probably isn't a good idea.

I recently replaced the 36v Ultrex on a friend's boat with a PP Move and was shocked and amazed at how light it was even with the Universal Mounting plate.
