If running on plane with speed. Trim down before letting off the throttle, will stop that.

Install a torque tab on the skeg may help a little

I would say move it to the left, opposite way that it is pulling.
Try slowing down gradually?

It only does when I have to let off quick, such as a rogue wake sneaking up me , it's always done it, I'm used to it, but I still don't care for it
Disclaimer: I've got a slow boat. My advice is worth even less than you're paying for it.
If that's all your boat does wrong I'd probably not mess with it. Obviously you're handling it well. Adjusting stuff and making changes may cause some other unintended consequences.
Your steering input is countering natural and unavoidable prop torque. It does not matter if you have cable or hydraulic steering the prop torque is there. When you cut the throttle prop torque goes away instantly... milliseconds later you correct your steering input to account for the loss of prop torque. Not really much you can do. Might try cutting the wheel simultaneously as you cut the throttle... LOL... nah I wouldn't try that either.
Once you get on plane that little tab on top of the prop does nothing.
I guess I'll just leave it alone, I am used to it, just be nice to eliminate it
Made a world of difference on my Tracker with a 75hp even when wide open and trimmed as far as the setup would let me before blowing out. It wasn't a pad boat though and cavitation plate would ride the surface but not break the surface. I've never played with one on a pad boat.
My old Pantera Classic would dart when chopping throttle too. I used to have fun by using it to help me make fast turns but it would already turn on a dime with a 25 Trophy. I DO NOT recommend people driving a boat like I did back in my wilder years. I knew how to use the nose hook many Charger hulls are prone to for shenanigans. It's amazing I never got thrown out and never wore a life jacket or kill switch back then either. I DO NOW BECAUSE NOT WEARING ONE IS STUPID.

I bet if you lower the motor height and / or lower your trim a little , and then test it this way, most of the issue would be solved.
a note book and a day spent testing and documenting jackplate height changes and trim changes will show having proper height and trim combo for both speed, rpm, and handling will reveal most people do not have height/ trim settings at ideal position.

If you're chopping the throttle and have a non- ratcheting gearcase, this is likely due to the prop stopping spinning. Going to be hard to overcome that with a torque tab.
