There are probably no negatives to doing this. All of the Humminbird equipment can operate on 16V.
Some report imaging improvements when going to a 16V Lithium but, when challenged, seem to have difficulty coming up with concrete evidence. There are a few threads on BBC about this topic. I think that, in most cases, people who run with lower voltage on their current setups, through either battery or wiring issues, will see benefits because of the increased voltage. Not sure there is any real difference between a boat with good wiring running on 12V Lithium and a boat with good wiring running on 16V Lithium.
With that said, I don't have first had experience with either to prove or disprove my theory... Just what I have read on Facebook and BBC.

They are all designed to run optimally off of 12V. 16V won’t hurt but isn’t necessary.
Sometimes people get a voltage drop due to a variety of reasons (poor wiring, running low on battery, etc) so 16V will ensure you are getting at least 12V

no issues the Humminbird units love 16 volts it will reduce your APH usage of them affording you to fit into a smaller AH lithium compared to a 12 volt. happy to help you out as well as provide you with BBc pricing. Powerhouse was the original 16 volt battery in the marine market and offers the best warranty at a full 15 years with 10 years no proration.
You will never have to concern yourself with power again if you go that route. I run a Solix, an Apex, and an HDS off of mine. Two 12’s and a 13-inch unit, as well as the 5 port switch, and a Mega 360. I purchased a Garmin Livescope and the black box along with a smaller lithium that powers that, but if I had to run it through the 16v battery I have no doubt it could handle it.
