Champion 21SX / Fish & Ski Setup

I have been looking for a Champion 21SX for a while but haven't found one yet so I may end up settling with a 190SX or possibly a Triton/Ranger 21 foot fish and ski. But I am trying to plan how I am going to setup the console when I get one. Would anyone care to share some of your setups for the dash of a fish and ski? I wanted to try to put dual graphs at the console or at least a 10inch graph if possible. I primarily use Garmin but I think the Echomap mount might cause an issue so I will probably have to go to the GPSMap any thoughts on this as well?

Been there with a Ranger 186............got me in a bass boat after 6 seasons. Too much ski and not enough fish.

I have never owned one but they are the result of a negotiation (everyone knows what I am talking about)....and they don't work well for either fishing or skiing
