Other than checking compression and lower unit for water in the oil, what should I expect a dealer to do to check out an engine I'm may be purchasing.

That is pretty much it.

An experienced tech on those motors may notice things that may have been jury-rigged or ready to cause problems or signs of abuse, etc. while inspecting it.

And they can perform a leak down test, which IMHO is the best indicator of internal engine health. JMHO
