    2 wires into one

I'm trying to figure something out. Please help.

I want to direct two Talon positive leads into a Battery Doctor switch that has Off/1/1+2/2. I want to run Port Talon positive wire to Post 1, and Starboard Talon positive wire to Post 2, then I would need one wire running to the battery. Can this be done? If so, what gauge wire and circuit breaker would I need running from battery doctor switch to battery? What gauge wire are the Talon running?

If I remember correctly, you are just wanting to provide a battery disconnect to your talons correct? SO they wouldn't drain the battery. But what you're talking out is using something thats for 2 batteries, so that the running motor COULD charge the other battery, etc. You're way overthinking this. This is what you want - a SIMPLE disconnect

See how easy it would be to add one end to the battery, then on the other side, add the talon leads to the other post and you're done. To disconnect, push the button on the breaker. Or even use something like this

Same thing, battery positive on one end, your two talons on the other end. Turn handle to cut power to both talons and your done.

So you are saying my idea won't work? If I used a circuit breaker like picture #1, I would want that Red Button to trip it, so I can turn it off, I can't find that exact switch in a 30 amp, plus how far can the Circuit Breaker be from battery, I think it's something like 10" or something or would I be okay with 2 circuit breakers, one being used as a shutup, if so, should I just go for the 60amp circuit breaker?

What you are asking (not familiar with a "battery doctor" switch, but I'm assuming it's just a battery a/b switch. If so, what you are asking will work. What it will do is allow you to turn either Talon on/off or turn the both on -- is this what you're trying to accomplish. If not and you are just looking for a cutoff switch, the keyed switch shown above is the most economical and works great. BTW, fuse/breaker it at the battery, between the battery and the switch.
