Did you all wrap yours at a certain point? I’ve always wrapped mine at 165, cuS that’s what someone told me to do. Lol.
in my opinion, it’s a good idea to wrap a pork butt around 165°. This is because the pork butt goes into what they call the stall as the fat renders and really slows down the cooking. By wrapping it, it helps to get through the stall and also maintains the moisture from what I understand. I always wrap mine.
