I'm going down south for a week and will be trailering my boat (08 201XL) 1000 miles. What preventive maintenance would you do or look at before the trip? The tires are good. My concern is the hubs and whether or not I need to do anything.

Hubs should be fine as long as their not leaking as new as the boat is. Check tire pressure and lug nuts, transom buckles, and swing tongue bolts and you shouldnt have anything to worry about.

would not be a bad idea to get an xtra hub or two and a second spare and all the tools to change it on the side of the road.
If the oil bath hub lenses are not milky white, then you should be fine. An extra spare would be an added piece of mind, but not necessary.
Check tire tread condition
Check air pressure in all tires plus spare
Check tie downs
Take along a radial tire plug kit
A 4 way tire wrench would be nice
A small bottle jack is much easier to take out and put back than digging the jack out of your truck
