2007 225 HO engr. temp.

Had my software temp. upgrade done. Help me with this.
Water temp was 61. Put in early and was foggy so had to idle out using GPS. I-Command inst. showed 178 deg temp. Noticed high temp at ideling before and small increase in rpm would drop temp. Did niot work here. Later after fishing a while noticed engine temp lower.Did run a test WOT 142 deg and 16PSI. Please answer these questions.
1. I thought the temp upgrade made the alarm go off at 175 deg.
2. Do you think my thermostats were closed early is why the temp went so high ?

The new update has the hot horn sound at 185 and the engine go into slow mode at 195...
