I can only speak for my 210 but it does good in rough water. A boat rides only as good as its driver IMO!
I had a 180 and am now in a 202, but they handle rough water well. Not as good as some boats but for being a high performance hull they do good.
I have a 180 and set up will have a huge effect on how it handles rough water. For example at an inch above the pad its horrible in 2ft white caps. It will beat you to death but will scream on top end. At even with a pad I can run 65 over the top of on the same conditions. I loose some speed but I won't loose time or get beat up if it gets rough. I can't speak for the 190's but I know the 202's and up handle rough stuff well if you can drive a boat.
A lot of people are scared to run a boat semi fast in rough stuff and slow down and get beat to death. For example I use to fish with someone with a Z20 Ranger that beat the everliving crap out of me in passenger seat and the boat was always to blame until I got to use the boat myself for a day. The boat rode awesome from 65-70 but at 50-60 it would KNOCK your teeth out! I thinks its all about what the boat is disigned to do and perform. Some people can't handle going that fast over rough stuff. My sugestion is find the boat you want by test driving them in the conditions your in the most.
