I am switching from cable steering to hydraulic steering in my 201 stratos my question is do I get the same length hoses as my cables were or are the a different length?

Depending on the system, it may come with long hoses that are cut to fit. But, since it is a 201, it likely is powered by something larger than 149hp. Only the bay star stuff has the cut to fit tubing and they are made for less than 150hp use.

I always run them past the motor, then loop them back to allow adequate stress loops. The steering actuator has to slide back and forth. You'll have to drill a bigger hole for the helm, screw a piece of wood to cover the old hole, find the center, use a hole cutter to cut the old hole bigger.
