Mozzarella en corrozza is like an egg batter dipped and fried mozzarella sandwich,,, I sauté red pepper and garlic and onion all diced small and dice up prociutto and dice up pancetta and sauté them with the peppers n onions in olive oil,,, when done mix into fresh made bread crumbs with some grated Parmesan cheese,,, then steam some pei mussels in butter and a cup of white wine ,,, as soon as they open remove them from pot and pour all the juices left in pot over the bread crumb mixture , then pack a generous amount of stuffing on top of each open mussel and arrange all on a sheet pan , bake at 350 for 10min ,,,, not practicing catholic just saw some nice stuff at market and ate meat every night this week til now lol

    Yes on the mussels.

My wife would tell me, "But you will eat something that comes from the butt of a chicken." LOL.
